Summer Black Truffle

The Summer Black Truffle,
scientifically known as Tuber aestivum Vitt. (and commonly called
Scorzone or Trifula Negra), is a beloved ingredient of the summer season.
Harvested in the heart of the hilly areas of the Emilian-Romagnolo Apennines,
this hypogeal fungus encapsulates all the essence and freshness of our
land.

Unique Characteristics

  • Appearance and Texture: It has a mostly rounded shape and a characteristic black, hard, and noticeably coarse rind (peridium), from which it gets the nickname "Scorzone".
  • The Heart of the Truffle: When cut, the flesh (gleba) reveals shades ranging from yellowish to bronze, crossed by a dense network of light, arborescent veins that show themselves in all their beauty.
  • Aromatic Profile: Characterized by a discreet and never overpowering presence, the Scorzone boasts a delicate, pleasant, and incredibly enveloping aroma, which recalls the scent of toasted hazelnut and woodland woods.

Precious White Truffle

scientifically named Tuber magnatum Pico, it represents the quintessence of gastronomic luxury. Often associated with specific, famous trade names that do not reflect the actual and real harvesting map (it is, in fact, known as the Alba White Truffle), this extraordinary hypogeous fungus actually grows spontaneously and is a true hidden excellence of the pristine woods along the Emilian-Romagnolo Apennines. It is here that we harvest it, offering an authentic, incredibly fresh product of inestimable value.

Unique Characteristics

  • Appearance and Texture: It is distinguished by a shape that can be globose or irregular and lobed, with a smooth and velvety surface (peridium) with shades ranging from pale cream to ochre yellow, sometimes with slight reddish veins.
  • The Heart of the Truffle: When cut, the inner flesh (gleba) is compact and solid, characterized by a color ranging from fleshy pink to light brown, crossed by a labyrinth of very thin and branched white veins.
  • Aromatic Profile: It possesses an aroma of magnetic and unmistakable intensity. To the nose, it releases rich, enveloping, and aphrodisiac notes.
